What is paella? Paella is a traditional rice and seafood dish from the València region of Spain. The original arroz a la Valenciana is made with rice of course in addition to green beans (both bajoqueta and tavella), chicken, rabbit, white beans (garrofón), snails, and seasoned with saffron and rosemary made with Senia rice or some other short grain rice such as bomba or basmati. However the dish has many variations. Artichokes, onion, and tomato are also used. Seafood paella adds clams, mussels, calamari, shrimp, crab, crayfish, or lobster. Then there is mixed paella which includes of mixture of land and sea ingredients and can include linguiça or chorizo.
